1 stick unsalted butter
1/4 cup sugar
1/2 teaspoon vanilla extract
1/2 teaspoon pumpkin pie spice
Zest of a lemon
1 1/4 cup all-purpose flour
1/8 teaspoon salt
Mix the butter and sugar together in a bowl.
Add the eggs, vanilla extract, lemon zest, and pumpkin pie spice.
Stir in the flour and salt.
Gently spread the dough n a greased 13 x 9 pan.
Bake in a 350F oven for 15 minutes.
4 large egg whites
2 1/4 cups finely chopped pecans
1 cup sugar
1 1/2 teaspoon ground cinnamon
Beat the egg whites in a large saucepan until they begin to froth.
Stir in the sugar, cinnamon, and pecans.
Cook over low heat, stirring until the sugar has dissolved.
Increase the heat and cook the mixture until it leaves the sides of the pan.
Remove it from the heat before it gets dry.
Spread the pecan mixture over the hot crust.
Bake for about 15 minutes in a 350F oven until slightly fluffy.
