Oatmeal Raisin Cookies

The Cookies:

1 3/4 cups all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon pumpkin pie spice
2 sticks unsalted butter
1/4 cups sugar
1 1/2 cups brown sugar
2 eggs
2 teaspoons vanilla extract
1/2 cup raisins
1/2 cup cranberries
1/2 cup chopped walnuts
3 1/2 cups old-fashioned rolled oats
Zest of an orange (optional)


Combine all of the dry ingredients in a large bowl and set aside.
In another bowl mix the butter, sugar, brown sugar, eggs, and vanilla extract together.
Stir in the flour mixture gently.
Add the rolled oats, raisins, cranberries. and walnuts.
Using a small ice cream scoop or a teaspoon place the batter on a cookie sheet lined with parchment paper.
Bake in a 350F oven for 14 minutes.
