Ginger Thins

These sweet and gingery ginger thins remind me of cold winter day. I hope you enjoy them!

The Thins:

1 1/2 cups all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon pumpkin pie spice
1/2 teaspoon ground ginger
3/4 cup unsalted butter
1 egg
1/4 cup molasses
1 cup brown sugar


Sift the dry ingredients together.
In a large bowl, mix the butter, brown sugar, molasses, and egg together.
Stir in the sifted dry ingredients.
Place 1/8 teaspoon-sized drops of dough onto a parchment paper-lined cookie sheet.
Bake for 5 to 6 minutes in a 325F oven.

    My goodness…these were really delicious. Never really cared for ginger snaps before (they were always too sweet and crunchy for my taste), but now you’ve turned me into a huge fan of them. These are by far the BEST I’ve had. Soft, delicately flavored, with just the right amount of sweetness. Love them!

    These were pretty awesome. Moist and firm, and full of flavor. Only problem is they were like potato chips; I couldn’t eat just one…
