These sweet and gingery ginger thins remind me of cold winter day. I hope you enjoy them!
1 1/2 cups all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon pumpkin pie spice
1/2 teaspoon ground ginger
3/4 cup unsalted butter
1/4 cup molasses
1 cup brown sugar
Sift the dry ingredients together.
In a large bowl, mix the butter, brown sugar, molasses, and egg together.
Stir in the sifted dry ingredients.
Place 1/8 teaspoon-sized drops of dough onto a parchment paper-lined cookie sheet.
Bake for 5 to 6 minutes in a 325F oven.
