Lemon loaf

A lemon surprise!!!

The loaf:
1 stick butter
1 cup sugar
2 eggs
Rind of 2 lemons
1/2 teaspoon vanilla
Juice of 1 lemon
1 1/2 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup milk

Mix the sugar and butter together. Then lemon juice, vanilla, and lemon rind. Add the eggs.
Shift the flour, baking powder, and salt together. Then add it to the mixture alternately with the milk.
Pour into a greased loaf pan.
Bake at 350F for 45 minutes.

The glaze:
Juice of 1 lemon
1/2 cup powdered sugar
Mix together and glaze the lemon loaf.

    This might have been my favorite so far. I love lemony baked goods, which is crazy because I hate lemons.

    The beautiful touch on these is the glaze- just enough tartness with the sweet. I think we should re-name it though….lemon loaf is too mundane for this delicious creation. Any thoughts?
